The styling of the book is very similar to the authors'' blog, with dreamy photos, lots of white space, and clear directions in a simple font. Every recipe is accompanied by a corresponding photo on the facing page, and most recipes are only one page long, which is something that I love in my cookbooks. The front section gives a brief overview of how their blog came to exist, their style of cooking, what to make when faced with an abundance of produce, as well as what to stock in your pantry. At the end, there''s a section that looks a bit like some of the mix & match boxes I loved in Mark Bittman''s Kitchen Matrix, with a basic formula and then 4 variations to make it your own for pesto, hummus, salsa, guacamole, and smoothies. That is followed by a short section on basic recipes for cooking grains, pizza dough, sauces, spreads, and dressings.

Virtually all of the recipes in this cookbook would be easy to cook on a weeknight within 20-30 minutes, maximally an hour. The ingredients are mostly cheap & easy to find at any of my local supermarkets (in suburban NJ). Many of the recipes are quite simple, but they''re combinations that work, the directions are well-written, and the end result is tasty. Jeanine has written recipes that are accessible to anyone, regardless of their skill level. The butternut squash red curry is a perfect rendition of one of my favorite take-out orders, and using this cookbook I can make it for myself in less time than it takes for delivery, and I think it tastes better. There are some new ideas (to me) in here as well, like the zucchini "ricotta", which I am quite excited to find since I''ve always struggled with making a delicious dairy-free lasagna.

As a busy working mom, this book has revamped the way I approach getting dinner on the table for my family. I used to spend an hour or more writing out a meal plan and grocery list each week, only to get to the market and realize a number of the ingredients I needed were out of stock, unappealing, or ridiculously expensive, thus throwing off that week''s meal plan. This book is organized by type of vegetable or fruit, and empowers the reader to go to the grocery store or farmers'' market, without much of a list in hand, and just buy what''s in season, looks good and is affordable, then come home and figure it out. The author lays out what items to always have on hand in your kitchen to ensure you can throw a meal together, and is a bit more loose and imprecise in her instruction, which is how I prefer to cook, especially during this busier season of life. I also appreciate her little tips and tricks for using up and enjoying various fruits and veggies. For instance, don''t buy baby carrots! Buy tiny, organic heirloom ones, as they''re 1000 times better.

My husband is very much a "meat and potatoes" kind of guy, and as this is a vegetarian cookbook, it''s helped bring more plant-based, vibrant meals in our lives. I often add some chicken or beef to these recipes for his sake, but it''s more of a garnish or side, rather than the main event.

The icing on the cake here, is It''s also a gorgeous book--one you won''t want to hide in the pantry, but display as a decorative touch. Seriously, even if the recipes were terrible, I''d still keep this book stacked on our sideboard, it''s that pretty.

Finally, my one and only complaint is that this book is too thick to lay flat inside my cookbook holder.

All in all, this cookbook is a gem. The recipes are fresh and creative, and never feel too stuffy or unattainable.

I am not a vegetarian, but this book looks like it will add some exciting new recipes with fruits and veggies to our dinners. The book is divided into the following chapters:

Apples
Artichokes
Asparagus
Avocados
Berries
Broccoli
Brussels Sprouts
Cabbage & Chicories
Carrots
Cauliflower
Citrus
Corn
Cucumber
Eggplant
Greens
Herbs
Mushrooms
Onions
Peas
Peppers
Potatoes
Root Veggies
Stone Fruits
Tomatoes
Winter Squash
Zucchini & Summer Squash
Recipe Variations for Pesto, Hummus, Guac, Salsa & Smoothies

Each chapter has somewhere between 3 and 5 recipes. Almost every recipes specifies at the bottom if it is gluten free or vegan, and if it isn''t most of the recipes provided some way to adapt it to be vegan and/or gluten free. The book itself is gorgeous! So many photos (I''m a sucker for pictures with my recipes), it is a solid hardcover book.

I’ve loved the love and lemons blog for a while, so when I saw that they had written a cookbook, I had to buy it. I have not regretted that move at all. The recipes are easy and I love that there are notes on how to make the recipe vegan or gluten free if that’s your thing. With three toddlers, it’s sometimes hard to make sure my family is getting enough veggies, but recipes like carrot waffles and double chocolate zucchini muffins do the trick and taste amazing.

My husband and I were skeptical of the zucchini lasagna, but it was delicious and the creamy pasta with Brussels sprouts is a favorite to serve to friends. I wasn’t sure at first about the book being arranged by vegetable, but I’ve found that it actually makes finding recipes for whatever comes in the csa box much easier than having it arranged by meal would be. The section in the back for customizing basics like hummus or pesto is also great.

I just purchased the kindle version, so maybe the print version is structured better.l, however, in the Kindle version the recipe ingredients are just one long Run-on sentence/list. Not practical and very confusing to follow. For a $20 ebook I expect better and more logical formatting. I do appreciate the unIque TOC listing by vegetables instead of recipe names. I thought it was a vegan cookbook, but there are also recipes that call for real eggs.

I love this book. It’s the sort of book I like to take out onto the porch with a beverage on a slow day and savor every page. I liked the way it’s organized by main ingredient and that it is very veg heavy. The roasted cauliflower tacos with chipotle cream is now installed as a guest fav. And the shiitake & spinach miso soup is a go-to comfort. If I can make one suggestion tho... as a vegan I wish instead of “leave out the eggs” or “skip the cheese” there might have been a reasonable substitution offered up. Skipping ingredients takes away from the dish and I feel was a bit of an afterthought instead of a fully thought element. Fortunately I was able to come up with said substitutions and I did buy the next book. Love it equally. Would make a great shower gift for a bride to be or college grad.

This is by far one of the most beautiful and inspiring cookbooks I''ve ever owned. Not only are the recipes superb and full of foodie inspiration, but aesthetically, this doubles as my guests'' (and my) favorite coffee table book. I am not a vegetarian or vegan, I am very much a meat eater, but the recipes in here could make even the most diehard carnivore rethink their dinner. Any respectable foodie''s bookshelf is incomplete without this one.
